Fujisu Premium is a top-grade junmai rice vinegar from Iio Jozo, a family-run vinegar brewery founded in 1893 in the Tango district of Kyoto Prefecture.

It is brewed from pesticide-free rice grown locally, using roughly eight times the rice content required by Japanese Industrial Standards for rice vinegar. The vinegar is made by slow static fermentation and a long maturation period in the traditional manner, giving it a notably mild, rounded acidity with a rich, rice-forward umami character comparable to a premium sake. It is well suited to delicate uses such as sushi rice, dressings, and sunomono where a smoother, less sharp vinegar is wanted.
