Umashio is the original Rokusuke Shio blend, a Japanese seasoned salt made by combining salt with dried shiitake mushroom, kombu kelp and dried scallop, along with sansho pepper for a savoury, umami-rich seasoning.

It is designed as an all-purpose finishing salt: use it as a dipping salt for tempura, karaage and other fried foods, or sprinkle over grilled fish, unagi and roasted meats in place of plain salt.
