This red Shinshu miso comes from the Shinshu region, the historic name for Nagano Prefecture, one of Japan's most celebrated miso-producing areas.
Shinshu-style miso is a rice miso made from soybeans and rice koji. This "aka" (red) version is fermented for a longer period than its white counterpart, developing a deeper reddish-brown colour and a firmer, saltier, more robust umami flavour. It is well suited to heartier miso soups, simmered dishes, and marinades where a bolder miso flavour is wanted.

- Net weight/volume: 450g
- Category: Miso paste (red rice miso)
