Amami Sango Shio is a coral salt made using seawater that has filtered through the coral sand of Yoron Island in the Amami Islands, part of Kagoshima Prefecture. Passing through the coral naturally enriches the water with calcium before it is slowly boiled at a low temperature to form crystals.

The low-temperature boiling process preserves a wide range of minerals and gives the salt a mild, rounded flavour compared to ordinary table salt. Use it as an everyday seasoning and finishing salt.
