Hobo Mayo, meaning roughly "almost mayo", is a Japanese egg-free, dairy-free mayonnaise-style dressing made from soy milk and miso rather than eggs and oil in the traditional style. This version is blended with yuzu kosho, a citrus and chilli paste, for a spicy, aromatic kick.

Use it as a plant-based alternative to regular mayonnaise on sandwiches, salads and vegetables, or as a dip and dressing for grilled meat and fish.
