Details +
Konjac rice is a rice-shaped product made from the glucomannan fibre of the konjac (devil's tongue) root, blended here with potato, tapioca and sweet potato starches. It is designed to be mixed with ordinary Japanese rice to reduce the overall calorie and carbohydrate content of a bowl of rice.
On its own it has a neutral taste and a slightly chewy, gelatinous texture, but it readily takes on the flavour of whatever rice or seasoning it is cooked with. It is typically rinsed and stirred through raw rice before cooking as normal in a rice cooker.
