Rishiri kombu comes from the waters around Rishiri Island off the northern tip of Hokkaido and is regarded as one of the finest kelps for dashi, favoured by kaiseki chefs in Kyoto.

It yields a clear, refined dashi with a clean, elegant umami and a light golden colour that never clouds the broth, making it the choice for delicate clear soups and dishes where the kombu should support rather than dominate the flavour.

  • Origin: Japan, Rishiri Island, Hokkaido
  • Net weight/volume: 30g
  • Category: Dried kelp (kombu)
  • Usage: Simmer gently in water to make a clear, refined dashi for clear soups and delicate simmered dishes
  • Storage: Store in a cool, dry place, tightly sealed (these are shelf-stable dried goods)
