Rausu kombu grows along the Rausu coast of the Shiretoko Peninsula in eastern Hokkaido and is often called the "king of kombu" for its rich, aromatic character.
It produces a golden, full-bodied dashi with a deep, rounded umami and a faint natural sweetness, considered the most intensely flavoured of the major kombu varieties. It is especially suited to hot pot and noodle broths where a pronounced kelp flavour is wanted.
