Tsubuan is a chunky style of anko, the sweetened adzuki bean paste central to Japanese confectionery, made here with a reduced sugar content so the flavour of the red beans comes through more clearly than in many shop-bought pastes.

The beans are cooked with their skins on and only partially mashed, giving a rustic, textured paste with whole and broken beans throughout. It is used as a filling or topping for dorayaki, manju, ohagi, and other wagashi, or spread on toast.
